Then you should. Oda puts "mini-arcs" into some of them. For an example, one of the earliest was about what happened to Buggie after Luffy tied up his chopped-up limbs and smacked him far yonder; and what happened to his crew. It perfectly establishes Lady Alvida making a comeback- except skinny thanks to the Sube Sube Fruit, and how Buggie came back together with his crew. Another one during the Alabasta arc was "Hachi's Ocean Stroll" or something, where it establishes what happened to Hachi after Arlong's arc; and it even introduces Keimei (not sure on the spelling anymore). The last ones we've seen were what happened to the Straw Hat crew after being separated; like Franky finding Doctor Vegapunk's old house/laboratory.

As for that development of Sanji turning gay, I see him turning back to normal once he sees Nami again.
