Assassin/Green Mage was one of my favorites. Since assassins got nerfed big time since FFTA, the green magic that boosts accuracy helps a lot. Combined with Ninja Tabi, these girls are the best at straight up killing.
Fusillier(sp)/Mog Knight because who doesn't like long range ultimas? Just spam stop shot until you have enough MP, or if you can do a little extra damage the elemental shots they were helpful too.
Blue Mage/Seer with dual wield is one of the funner combinations, IMO. Magic Frenzy is one of the coolest abilities, and with some of the awesome support from blue magic like White Wind and Mighty Guard, what's not to like?
I remembered these off the top of my head, so when I get around to turning on my DS again I'll look and see what else I had.
