You seem to imply that science is the answer to everything and that what isnt proven by science doesnt exist. If science doesnt know everything about how a human brain works, how can you conclude that we are using 100% of our capacity? Has science tapped into those forbidden zones in our brain that would compromise (how did you know?) our body functionality?

You're arguing the semantics of capacity here.
100% of the brain is used, at different times, for different things.
The exact functionality of everything it does isn't fully understood, but it can be seen in active operation.
It's not having what you want - It's wanting what you've got.
